If you over-extend yourself and say yes to all the things, you will find yourself in the situation described above where you don’t have enough time in your day for it all, or you spend time on things that aren’t appropriately urgent/important. Conversely, it's also easier to say "yes" because you know how far you can extend yourself, and you know when you will need breaks to do different things. Don't forget about taking care of yourself.
